Domecq - Manzanilla

Winemaker's Notes...

"Domecq Manzanilla is a special, very delicate type of Fino sherry made from Palomino grapes grown in cooler vineyards nearer the Spanish seacoast. It is then solera aged under a layer of flor yeast in bodegas in the coastal town of Sanlúcar de Barrameda. Here, the lower temperatures and higher humidity creates a thicker, more even flor layer, resulting in a pale, dry sherry that is at once pungent yet delicate, with a hint of saltiness. Serve chilled with olives, almonds, boiled or grilled shrimp."
